On Thursday, May 31, 2018, Atlas’ Executive Chef Christopher Grossman and Pastry Chef Christian Castillo will have the honor of cooking at the historic Beard House in New York, NY during a special, whole-lamb feast hosted by beloved shepherd Craig Rogers. Celebrating the full bounty of spring, Rogers and his handpicked roster of chef and farmer friends have collaborated and crafted a seasonal tasting menu featuring superior cuts from head to hoof.
For the charitable event benefiting the James Beard Foundation, Chef Grossman, best known for his acclaimed American cuisine combined with European influences, will be serving Roasted Lamb Rack with Black Garlic–Braised Lentils; Straight-from-the-Backyard Garlic and Cauliflower; Pine Nut–Fava Bean Gremolata; Black Truffle–Lamb Sausage, and Early Summer Field Pea Hummus. To finish off the evening on a sweet note, Chef Castillo will delight diners with his Strawberry–Raspberry Mousse with Sheep’s Milk Yogurt Foam, Strawberry Consommé, Strawberry Meringue, Basil Gelato, White Chocolate, and Olive Oil Powder.
In addition to chefs Grossman and Castillo, the Shepherd and Friends whole-lamb feast will feature Craig Rogers (Border Springs) and chefs Andy Little (Josephine, Nashville, TN), Nick Sierputowski (Cask & Larder, Orlando, FL), Keith Roberts (Edwards Virginia Smokehouse, Surry, VA) and Nick Graves (Restaurant17, Travelers Rest, SC).
